Sweet Potato Hash with Scrambled Eggs

About the Recipe

This is one of my favorite breakfasts! At 20 grams of protein per serving and with all the veggies this is a highly nutritious way to start your day.

Ingredients

  • 1/2 cup Sweet Potato, Peeled and cut into 1/2 inch cubes

  • 2 Eggs

  • 1 cup Kale, rib removed and cut into bite size pieces

  • 1 Tbs feta, crumbled

  • 1 tsp olive oil

  • Salt

  • 1 pinch black pepper

Preparation

Prep

  1. Peel sweet potatoes, cut into bite size cubes, toss with half the oil, salt and pepper. Roast in a 400 degree oven for 15 minutes. (Can make up a large batch and store refrigerated for 1 week)

  2. Wash kale, remove leaves from inner leaf and chop into bite size pieces.

Make

  1. Heat remaining half of oil in a sauté pan. Add kale and cook until wilted. Mix eggs together in a bowl with salt and pepper to taste. Add to warm pan with kale and cook until set. Mix in 1/2 cup of sweet potatoes and feta cheese.
